Inspired by the medieval wines once produced in this region when Portugal was born as a kingdom, this wine blends white and red grapes during fermentation — just as the Cistercian monks did in the 12th century.
The organic grapes are hand-harvested and swiftly transported to the winery to preserve their freshness.
Part of the wine ferments in a very old clay amphora, coated on the inside with pine resin. The rest ferments in stainless steel vats. After 2 to 3 months, the two are blended, and left to naturally stabilize and clarify over time. It is neither filtered nor fined.
The combination of fully ripe Fernão Pires (white) and fresh Trincadeira (red) results in a beautifully balanced wine, with aromas of stone fruit and red berries. On the palate, it is full, complex, and remarkably savory.
